This dish is a flavour bomb. My laksa recipe is based on a Nonya laksa lemak recipe from Malacca but has a few substitutions to make it vegetarian/vegan. The speciality ingredients you will need to make this are: galangal (which is a root from the ginger family), tofu puffs and doubanjiang (a spicy fermented broadbean paste). Laksa Curry is a popular Malaysian soup made using rice noodles, meat, vegetables and a spicy coconut milk curry.
Instructions to make Vegan laksa:
- Add coriander and cumin seeds in a small pan on low heat and slightly toast them for 1-2 minutes, careful not to burn them..

- Make your zucchini and carrot noodles and place in the serving bowl too..
- Top with bean sprouts and when laksa is ready, pour 3-4 ladles on top of the noodles in the serving dish..
- Top with coriander and sesame, squeeze fresh lime and enjoy hot..
