Freezer Preparation To prepare the lasagna for the freezer, allow the lasagnas to cool completely. Layer uncooked lasagna noodles and half of the cheese mixture. To prepare the white sauce, pour the soya milk into a large saucepan and add the onion, bay leaf and thyme.   9. Top with a layer of pasta sheets.
  10. Put another third of mince mixture in each dish, another pasta layer then repeat one last time.
  11. Spread half of the white sauce on top of each dish and sprinkle half of the cheese over each to finish.
  12. Bake for 30 – 35 minutes or put in the fridge to cook later. From chilled oven time is 40 – 45 minutes.
  13. Wrap the remaining lasagne in foil and freeze for another day. Defrost overnight in the fridge and cook from chilled as above.

That's a win in my book! Use a disposable foil lasagna pan. When I make lasagne to put in the freezer, I do not bake it first. For me, the best way to freeze it is using a sheet of Glad's Press-N-Seal over the top of the lasagna, pressing down to get all the air out if you can, between the top layer (sauce/cheese) and your press-n-seal. You want more or less a vacuum seal (the cheap way).
