Before I met J he had travelled to Malaysia and by the sounds of things had feasted on vegan laksa all day long. He would often proclaim its tastiness and longed for us to visit Malaysia together and show me this delicious dish in all its glory. This dish is a flavour bomb. My laksa recipe is based on a Nonya laksa lemak recipe from Malacca but has a few substitutions to make it vegetarian/vegan.

  9. Make your zucchini and carrot noodles and place in the serving bowl too..
  10. Top with bean sprouts and when laksa is ready, pour 3-4 ladles on top of the noodles in the serving dish..
  11. Top with coriander and sesame, squeeze fresh lime and enjoy hot..
